Prawn And Mung Bean Noodle Stir-Fry

Ingredients:

100 gram             Dry mung bean noodles

100 gram             Raw king Prawn

50 gram               Onion – sliced

50 gram              Celery leaves and stalks – Julienne sliced

20 gram              Red pepper – Sliced

1                            Spring onion – sliced

2 clove                 Garlic – finely chopped

1 tbs                     Coconut oil

1 tbs                     Rapeseed oil

1 tbs                     Oyster sauce

1 tbs                     Dark soy sauce

1 tsp                     Fish Sauce

1 tsp                     Coconut sugar

1/2 tsp                 Ground black pepper

6                           Coriander leaves

Method

-Cook the mung bean noodles according to the instructions on the package. I soaked mine in hot water for 5 minutes or until the noodles turned translucent. Drain the excess water off.

-Heat the coconut oil in a pan. Then add the onion and garlic. Gently stir until the garlic turns into a golden brown colour.

-Add the red pepper, mung bean noodles, oyster sauce, dark soy sauce, fish sauce and coconut sugar. Stir the ingredients together by using a spatula and a fork to make the noodles separate nicely.

-Add the prawns and rapeseed oil; keep stirring until the prawns are cooked.

-Add the spring onion, celery and ground black pepper. Stir for a further minute.

-Garnish this Prawn And Mung Bean Noodle Stir-Fry with coriander leaves and that is it, your dinner is served.

Tips:

– Add a tiny bit of water or oil in Prawn And Mung Bean Noodle Stir-Fry, if the Mung bean noodles start to stick together.

-The secret of a good stir fry is to cook the food at a medium to high heat and put the right ingredients in at the right time.
