THAI STYLE OMELETTE

Thai Style Omelette

Ingredients:

3                             Extra large eggs

1 handful              Spinach

2                             Baby plum tomatoes – halved.

3-4                         Basil leaves

1                             Spring onion – chopped

15 grams              Feta or goat cheese (optional)

1 tbs                       Fish sauce

1 tsp                      Oyster sauce

1 pinch                  Sugar

1 pinch                  Ground black pepper

1 squeeze             Sriracha sauce (optional)

1 tsp                      Coconut oil

Methods:

-Beat the eggs in a big bowl then add fish sauce, oyster sauce and sugar, mix vigorously for about 2 minutes or until slightly foamy on the surface.

-Heat coconut oil in a pan, add tomatoes and spinach, cook gently until it softens slightly. Turn the hob to a medium heat, then in goes the egg mixture.

-Scatter feta cheese, ground black pepper and basil leaves half way before the eggs mixture is fully cooked.

-Depending on how you like your eggs in the morning I like Thai Style Omelette slightly softened which should take about 4-6 minutes before you can fold.

-I often lightly squeeze Sriracha sauce over the omelette and scatter spring onions. Enjoy Thai Style Omelette.

Tips: Try Thai Style Omelette with a baby leaf salad and add some cooked or grated fresh beetroots… Yum!
