Cheat’s Pad Thai
Serve: 2
Ingredients:
100 gram Rice noodles
80 gram Beansprouts
15 gram Peanut – crushed
3 Spring onion – sliced
2 clove Garlic – finely chopped
3 tablespoon Vegetable oil
2 tablespoon Peanut butter
1 tablespoon Sweet chilli sauce
1 tablespoon Demerara sugar
½tablespoon BBQ sauce
1 teaspoon Dark soy sauce
1teaspoon Light soy sauce
1/2 teaspoon Marmite/Yeast extract
1 teaspoon Lime juice
½ teaspoon Chilli flakes
1 pinch Salt and pepper to taste
-Cook the rice noodles according to the instructions on the package.
-Gently heat 1 tablespoon of vegetable oil, peanut butter and Marmite.
-Add demerara sugar, sweet chili sauce, BBQ sauce, dark and light soy sauce. Stir until the sugar’s dissolved (approx 30 seconds). This is your Vegan Pad Thai sauce.
-Gently fry the garlic in the vegetable oil until it turns slightly golden brown in color. Add the rice noodles, Pad Thai sauce and stir well.
-Put in the beansprouts, spring onion and lime juice. Add salt and pepper to taste.
-Garnish with crushed peanuts and chilli flakes (optional), serve immediately.
