Cheat’s Pad Thai
100 gram Rice noodles
80 gram Beansprouts
15 gram Peanut-crushed
3 Spring onion-sliced
2 clove Garlic -finely chopped
3 tablespoon Coconut oil
2 tablespoon Peanut Butter
1 tablespoon Sweet chili sauce
1 tablespoon Demerara sugar
½tablespoon BBQ sauce
1 teaspoon Dark soy sauce
1teaspoon Light soy sauce
1/2 teaspoon Yeast extract
1 teaspoon Lime juice
½teaspoon Chilli flake
1 pinch Salt and pepper to taste
-Cook the rice noodles according to the instruction on the package.
-Gently heat 1 tablespoon of Vegetable oil, Peanut butter, Marmite
Demerara sugar, Sweet chili sauce, BBQ sauce, Dark and Light soy sauce. Stir until the sugar dissolved (approx30 seconds). This is your Vegan Pad Thai sauce.
-Gently fry the garlic in the vegetable oil until it turns slightly golden brown in color. Add the rice noodles, Pad Thai sauce, stir well.
-Put the beansprouts, spring onion, lime juice, salt, and pepper to taste.
-Garnish with crushed peanut and chili flake (optional). And serve immediately.
