Coconut Chia Pudding

Ingredients:

30 grams            Chia seed

90 grams            Coconut milk

20 grams            Almond milk

1-2 squeeze        Honey

1-2 dollop           Greek yogurt

1 handful            Fruit of your choice, mango, lychee, pineapple are all good!

Method:

– Mix the chia seeds and coconut milk in a bowl, cover with cling film and leave in the fridge for at least 4 hours or overnight.

– Check if the chia seeds are puffed up to your preference. If you want chia seed a bit softer then add more almond milk.

– Transfer the mixture into a container of your choice. I prefer tumbler glasses or mason jars as I think it’s pretty and I can see the layers of ingredients.

– Add dollops of Greek yogurt, squeezed honey and fruit on top. Tahdahhh! Enjoy your Coconut Chia Pudding as breakfast or dessert.
