COCONUT ICE LOLLIES

Coconut Ice Lollies

Coconut Ice Lollies

Serve: 4

Ingredients:

400ml                         Coconut water

60 gram                      Coconut flesh – grated

4 tbs                             Sugar

1 small pinch              Salt

75 gram                       Dark chocolate (optional)

Method

-Put the coconut water and sugar into a saucepan. Gently heat until the sugar dissolves. Do not boil. Put a tiny pinch of salt and gently stir, then remove from the heat immediately. Leave it to cool.

-Separate the grated coconut flesh into the 4-5 ice lolly moulds.

-Pour the coconut water into the ice lolly moulds (mine hold 100ml per lolly). Place the lid back on and put the moulds in the freezer overnight.

-Put the dark chocolate in a microwavable jug or bowl. Heat on full power for 20 seconds, take it out and stir. Then keep repeating this process until the chocolate is fully melted.

-When ready to serve, run warm water on the ice lolly moulds. Remove and enjoy these refreshing Coconut Ice Lollies on its own or drizzle with the melted dark chocolate .

Tip:

-Coconut Ice Lollies tastes even better with young coconut flesh. So if you can get a hold of one. Make sure you use it.

-Keep very close eyes when heating the coconut water aand chocolate as you do not want to boil them.
