Ginger Chicken Stir-Fry

Ingredients:
180 gram Chicken breast – diced or sliced
60 gram Onion – chunkily chopped
60 gram Red pepper – sliced
30 gram Spring Onion – sliced
10 gram Ginger – peeled and thinly sliced
1 clove Garlic – peeled and finely chopped
2 tablespoon Vegetable oil
1 teaspoon Fish sauce
1 teaspoon Oyster sauce
1/2 teaspoon Sugar
1 handful Cashew nuts (optional)
1-2 stalks Coriander (optional)
1 pinch Black pepper
-Fry the onion and oil in a frying until it softens slightly.
-Add the garlic and chicken then stir-fry until the chicken is cooked. Mine took approx 7 minutes.
-In goes the fish sauce, oyster sauce and sugar then stir all the ingredients together.
-Put in the red pepper, ginger and spring onion then stir all the ingredients together for a further 1-2 minutes.
-Lastly, sprinkle a bit of ground black pepper and serve immediately.
-Garnish with cashew nuts and coriander if preferred.
Tips:
-If you can’t find fresh ginger, click here for Chicken in garlic and ginger sauce where I used ginger puree instead of the fresh one.
-Feel free to add 1-2 tablespoon of water if you prefer a little more sauce on the plate.
-You can enjoy this delicious and nutritional dish with steamed Thai Jasmine rice or cooked noodles.
