Homemade Massaman Curry
Massaman Curry:

Ingredients to marinate the pork:
480 gram Pork Steak – diced
1 tbs Fish sauce
1 tsp Dark soy sauce
1 big piece Pineapple – chunkily chopped
Ingredients for Massaman paste:
1 Roast red chilli
½ Red Onion
3 Garlic clove – peeled
6 Clove
½ Ground black pepper
1 thumb size Ginger – peeled and chunkily chopped
1/2 tsp Ground cinnamon
1/2 tsp Ground nutmeg
1/2 tsp Ground coriander seeds
1/2 tsp Ground cumin
1/4 tsp Mace
1/2 tsp Salt
1/2 tsp Shrimp paste (optional)
1 tsp Lemongrass puree
Ingredients for seasoning the curry:
1 tbs Honey
1 tsp Sugar
1 tsp Fish Sauce
2 tbs Coconut Oil
250 gram Thai Coconut Milk
1 handful Roasted Peanuts
-Mix the pork, fish sauce, dark soy sauce and pineapple chunks together then marinate them for at least 1 hour. When ready to cook, remove the pineapple chunks from the bowl.
-Blend the roasted red chilli, red onion, garlic cloves, cloves, black pepper, ginger, cinnamon, nutmeg, coriander seeds, cumin, mace, salt, shrimp paste and lemon grass puree together until it forms a paste.
-Fry 3 tablespoon of the fresh Massaman paste in the coconut oil. Add the marinated pork, stir well, and then wait until the pork is cooked.
-Add the coconut milk, bring it to a boil.
-Put in the honey, sugar and fish sauce then simmer for approx 20 minutes.
-Lastly, add the peanut and garnish with coriander if you like.

Tips:
-How to make a roasted red chilli? Just put the red chilli in a preheated oven at 200 Celsius for approx 15 minutes.
