Larb Woon Sen (Vegan)

Ingredients:
50 gram Dry Glass noodles
20 gram Small red onion – sliced
3 gram Coriander leaves
1 Red Birds eye chilli
1 Spring onion – sliced
1 tablespoon Lime juice
1/2 tablespoon Ground toasted rice
1 teaspoon Light soy sauce
1 teaspoon Soft brown sugar
1 teaspoon Oil
1 pinch Salt
1 pinch Chilli flakes (optional)
-Mix the red chili, lime juice, soy sauce, sugar and oil in a small mixing bowl. This is your spicy salad dressing.
-Cook the glass noodles according to the instructions on the package. Drain the excess water off.
-While the glass noodles are still warm. Pour the salad dressing on the noodles. Mix well.
-Add the spring onion, red onion, ground toasted rice, chilli flake and a pinch of salt.
-Garnish with the coriander and serve immediately.
