Lean Mince Pork Hot And Spicy Salad

Ingredients:

250 gram                 Lean mince pork

1/4                            Onion – chopped

1 clove                      Garlic – finely chopped

3                                Spring onion – chopped

10                              Mint leaves – roughly chopped

1 tsp                          Coconut oil

1-2 tbs                      Sesame seeds

1                                Little gem lettuce

1                                Pinch of salt

1                                Pinch of ground pepper

1                                Pinch of paprika

1 tsp                         Finely chopped red chilli

1 tbs                         Fish sauce

1 tbs                         Lime juice

2 tsp                        Honey

3 stalks                   Coriander – roughly chopped (optional)

Method

-Mix the red chilli, lime juice, fish sauce and honey into a mixing bowl. This is your seasoning sauce.

-Flash fry the onion, garlic and coconut oil .

-Then add the lean mince pork and stir until the mince becomes semi cooked. Then add 1 tablespoon of the seasoning sauce followed with a pinch of salt, pepper and paprika. Keep stirring until the liquid has evaporated.

-Once the mince is cooked and dry. Take the cooking pan off the heat.

-Immediately add the spring onion, the rest of the seasoning sauce, coriander, mint and sesame seeds . I serve Lean Mince Pork Hot And Spicy Salad on a bed of little gem lettuce. Voila, job done!

Tips:

-You can also replace the sesame seeds with toasted ground rice for an authentic taste.

-Want a hotter dish? Just add one more tablespoon of chopped red chilli!
