Mackerel with Chilli and Lemon Dressing

Serve: 1

Ingredients :

125 gram                       Mackerel in tomato sauce (1 tin)

45 gram                         Shallot – thinly sliced

10 gram                         Red chilli – finely chopped

1 tsp                               Lemon juice

1 tsp                               Fish sauce

3/4 tsp                          Honey

5-6                                 Mint leaves

100ml                           Oil

Method

-Mix the fish sauce, red chilli, honey and lemon juice in a small mixing bowl, set aside.

-Heat the oil and fry the shallot until it turns crispy and golden in colour (approx 2-3 minutes). Remove the cooked shallot and put it on a kitchen towel to absorb the excess oil.

-Transfer the mackerel fillets and lay them on a serving plate.

-Drizzle about 2 teaspoons of the salad dressing on the fillets and top with fried shallot. Garnish with mint leaves and serve with a lemon wedge.

Tip:

-Keep a very close eye while frying the shallot as it is easily burnt.

-Toast a sourdough slice and serve with Mackerel in Chilli and Lemon Dressing. It’s truly delicious.

-You can replace the Mackerel with Tuna or Smoked Salmon. They are just as good.
