THAI MEATBALL CURRY

Thai Meatball Curry

Thai Meatball Curry

Serve: 2

Ingredients:

400 gram                  Fresh meatball

300ml                        Thai coconut milk

2 tbs                           Red curry paste

1 tbs                           Rapeseed oil

1 tbs                           Sugar

1/2 tbs                       Fish sauce

1/2 tbs                       Oyster sauce

1/2 tsp                       Lemon juice

1 pinch                      Salt

6 leaves                    Coriander – finely chopped

Method

-Put the oil and meatballs into a frying pan. Then fry until the meatballs caramelise and semi-cook. Then drain the excess oil off.

-Add Thai coconut milk, gently stir and bring it to a boil.

-Turn the heat down and add sugar, salt, red curry paste, fish sauce and oyster sauce. Stir and simmer for approx 15 -18 minutes. Keep stirring every 4 minutes

-Add the lemon juice then gently stir. Garnish with coriander and serve Thai Meatball Curry immediately.

Tip:

-Thai Meatball Curry is lovely with Thai Jasmine Rice.

-Feel free to add some vegetables in this curry. Not only is it more nutritious but also adds lovely colours to the dish.
