PAD-PRIK-KING (VEGETARIAN)

Ingredients: 

225g                                        Paneer – cubed

100g                                        Vegetables of your choice

100ml                                     Water

2 tablespoon                             Vegetable oil                  

1 tablespoon                             Thai red curry paste

1 tablespoon                             Dark brown sugar

1/2 teaspoon                            Light soy sauce

1/8 teaspoon                            Lemon juice

4                                             Kaffir lime shredded

1 pinch                                    Salt and ground black pepper             

 

 

 

 

Method

-Heat the oil in a frying pan over a medium heat. Season the paneer with a pinch of salt and ground black pepper. Put the paneer in the frying pan and fry until it turns golden in color. Remove the paneer cubes from the pan and place them on a kitchen towel to absorb the excess oil.

-Place the same pan back on the hob, turn the heat down to medium to low. Add the red curry paste, gently fry until the herbs and spices are infused. Add a little more oil if required.

-Put in the green beans or vegetables of your choice, sugar, soy sauce and water. Bring it to a boil and simmer until the sauce thickens slightly. Place the paneer back into the pan. Followed by shredded Kaffir lime leaf and lemon juice then stir.

-Enjoy this flavorsome, quick and easy Pad Prik King with Rice or Noodles. Yummmm.

Tip:

– Stir-fry is all about quick cooking. So make sure you prepare all the ingredients prior to cooking.
