Pad Prik Yuak
Serve: 2-3
Ingredients:
400 gram Minced pork
125 gram Pepper – sliced
15 gram Red chilli – finely chopped
2 clove Garlic – finely chopped
20 Basil leaves
2 tbs Rapeseed oil
1 tbs Fish sauce
1 tbs Oyster sauce
1 tsp Sugar
1 tsp Dark soy sauce
-Put the rapeseed oil into a frying pan. Then add the chopped garlic and chilli. Gently fry until the garlic turns a golden brown colour.
-Add the minced pork and stir-fry on a high heat for 5 minutes.
-Season with the fish sauce, oyster sauce, sugar and dark soy sauce then stir-fry in a medium heat for a further 5 minutes.
-Put the pepper into the same pan. Then stir-fry on a medium heat for a further 6-8 minutes.
-Fold in the basil leaves. Transfer Pad Prik Yuak onto a plate and serve immediately with Thai Jasmine Rice.
Tip:
-You can replace the minced pork with chicken, pork or beef. It’s all good.
-Prik Yuak is known as Banana pepper in the West. It has got a thinner flesh and pale lime green colour. You can also use pepper from a local market.
