Pineapple Fried Rice (Vegan)

Ingredients:
250 gram Cooked Brown rice
100 gram Tofu – cubed
100 gram Pineapple – chunkily cut
50 gram Carrot – cubed
50 gram Garden peas
50 gram Sweetcorn
50 gram Onions – chopped
15 gram Cashew nuts
2 clove Garlic – finely chopped
1 Spring onion – finely sliced
2-3 tablespoon Vegetable oil
2 teaspoon Light soy sauce
1/2 teaspoon Sugar
1/4 teaspoon Lemon juice
1/8 teaspoon Turmeric powder
1 pinch Salt and black pepper
1/2 Red chilli – sliced
4 leaves Coriander (optional)
-Gently fry the tofu until crispy and golden in color. Remove and put aside.
-In the same pan, gently fry the onion with the vegetable oil until it turns translucent. Add the garlic and continue to cook until the garlic turns light yellow (approx 1 minute).
-Add the carrot, garden peas, sweet corn and turmeric powder. Stir well.
-Put in the rice, pineapple and fried tofu. Season with the soy sauce, sugar, lemon juice, salt and pepper. Stir until the oil and seasonings cover the rice well.
-Transfer the rice into a serving dish. Garnish with the cashew nuts, red chilli slices, coriander and spring onion. Serve immediately.
Tip:
– I will say it again. Stir-fries are all about quick cooking and preparations. Make sure you chop the ingredients in advance. You will gain better control while cooking.
-I used fresh pineapple for this recipe. Leave the sugar out if you use canned pineapple.
-You can carve a pineapple and use it as a pineapple serving boat. A show stopper indeed.
