Pineapple Fried Rice (Vegan)

Ingredients:
250 gram Cooked Brown rice
100 gram Tofu-cubed
100 gram Pineapple-chunky cut
50 gram Carrot-cubed
50 gram Garden pea
50 gram Sweetcorn
50 gram Onion-chopped
15 gram Cashew nut
2 clove Garlic-finely chopped
1 Spring onion-finely sliced
2-3 tablespoon Vegetable oil
2 teaspoon Light soy sauce
1/2 teaspoon Sugar
1/4 teaspoon Lemon juice
1/8 teaspoon Turmeric powder
1 pinch Salt and black pepper
1/2 Red chili-sliced
4 leaf Coriander (Optional)
-Gently fry the tofu until crispy and golden in color. Remove and put set aside.
-In the same pan, gently fry the onion with the vegetable oil until turns translucent. Add the garlic and continue to cook until the garlic turn light yellow. (approx 1 minute)
-Add the carrot, garden pea, sweet corn, turmeric powder. Stir well.
-Put the rice, pineapple, and fried tofu. Season with the soy sauce, sugar, lemon juice, salt, and pepper. Stir until the oil and seasonings cover the rice well.
-Transfer the rice into the serving dish. Garnish with the cashew nuts, red chili slices, coriander, spring onion. Serve immediately.
Tip:
– I will say it again. Stir-fried is all about quick cook and preparation. Make sure you chop the ingredients in advance. You will gain better control while cooking.
-I used the fresh pineapple for this recipe. Leave the sugar out if you use the canned pineapple.
-You can carve pineapple and use it as a pineapple serving boat. A show stopper indeed.
