SPICY BEANS ON TOAST

Spicy Beans on Toast

Spicy Beans on Toast (Vegan)

Serve: 2

Ingredients: 

1 tin                                        Mixed beans – drained

2 slices                                    Sourdough – toasted

60 gram                                  Onion – chopped

10 gram                                  Red chilli – finely chopped

2 clove                                    Garlic – finely chopped

160 milliliter                            Passata 

50 milliliter                              Water        

2-3 tablespoon                        Olive oil

1/2 teaspoon                           Garam Masala powder

1/2 teaspoon                           Dried mix herbs

1/2 teaspoon                           Ground cumin

1/4 teaspoon                           Ground cinnamon

1/2 teaspoon                           Light soy sauce  

1/2 teaspoon                           Yeast extract (Marmite)

1/4 teaspoon                           Honey                                

 

 

 

 

Method

-Put 2 tablespoons of olive oil in a pan. Add the onion and gently fry until it turns translucent.

-Add the garlic, chili, Garam Masala, cumin and cinnamon then stir.

-In goes the pasata, bring it to a boil and simmer for 10 minutes. Add a splash of water if required. 

-Put in the mixed beans, soy sauce, honey, dried mixed herbs and yeast extract. Fold and simmer for a further 5-10 minutes. Add water if required.

-Serve it on a piece of sourdough toast. Dollop a tablespoon of soft cheese or greek yogurt on top. Garnish with your choice of greens. Enjoy.   

Tip:

– Not a big fan of yeast extract? Use a teaspoon of bouillon powder or a vegetable stock cube instead.
