Spicy Salmon and Potato Cake

Serve: 2

Ingredients: 

450 gram                                 Potato – cooked and mashed

130 gram                                 Salmon – poached and flaked

1                                             Egg – beaten

100 gram                                 Breadcrumbs

50 gram                                   Flour

10 gram                                   Spring onion – thinly sliced

1                                             Small red chilli – finely chopped

2 tablespoon                            Vegetable oil

2 tablespoon                            Mayonaise      

1/2 teaspoon                           Lemon juice        

1 pinch                                   Salt and pepper to taste                                 

 

 

 

 

Method

-Preheat the oven to 200 Celsius. 
-Mix the potato, salmon, spring onion, mayonnaise, salt, pepper, chilli and lemon juice in a large mixing bowl. 
-Roll the mixture into a ball then gently flatten into shape. 
-Cover the fish cake with the flour, dip into the beaten egg. Lastly coat in the breadcrumbs. 
-Heat the oil in a frying pan. Gently fry the fish cake until the crumbs turn golden brown. 
-Bake for 10-15 minutes and serve a lovely fresh salad or dip in sweet chilli sauce.

-You can use other types of fish ie. tuna, mackerel or smoked haddock.

-Wash and clean the potatoes well. No need to peel the skin as it is packed full of nutrition.
