Sriracha Pulled Jackfruit (Vegan)

Ingredients:
250 gram Jackfruit flesh
40 gram Cooked pea
40 gram Sweet corn
1 Red onion-chopped
2 tablespoon Rapeseed oil
1 tablespoon Sriracha sauce
1 tablespoon Soft brown sugar
1 teaspoon Paprika
1 teaspoon Cider vinegar
1/2 teaspoon Ground cinnamon
1/2 teaspoon Ground cumin
1/2 teaspoon White sugar
1/2 teaspoon Soy sauce
1/4 teaspoon Salt
-Gently fry the chopped red onion with oil until it turns translucent. Usually, it will take about 15-20 minutes.
-Add the cinnamon, cumin, paprika and gently fry for further 2 minutes. Keep stirring.
-Turn the hob to medium heat then in goes the jackfruit, Sriracha sauce, soy sauce. Mix all the ingredients well.
-Put the soft brown sugar, sugar and cider vinegar and keep stirring until the liquid evaporated.
-You can serve this delicious vegan Sriracha pulled jackfruit in so many various ways i.e. Put in a tortilla wrap, taco, burger with rice or salad. The list goes on.
-Lastly, put the peas and sweetcorn and fold all the ingredients together.
-Use the masher or two forks to pull the jackfruit apart which will make it looks stringy

-It is not easy to get the fresh jackfruit flesh. I use the jackfruit from the can.
-This dish is very versatile, you can put in the burger, tortilla wrap, taco. You can have it with rice and salad yummm. I put it in the spring roll.
