SRIRACHA PULLED JACKFRUIT (VEGAN)

Sriracha Pulled Jackfruit

Sriracha Pulled Jackfruit (Vegan)

Serving: 2

Ingredients:

250 gram                              Jackfruit flesh

40 gram                                Cooked peas

40 gram                                Sweetcorn

1                                          Red onion – chopped

2 tablespoon                         Rapeseed oil

1 tablespoon                         Sriracha sauce

1 tablespoon                         Soft brown sugar

1 teaspoon                           Paprika

1 teaspoon                           Cider vinegar

1/2 teaspoon                        Ground cinnamon

1/2 teaspoon                        Ground cumin

1/2 teaspoon                        White sugar

1/2 teaspoon                        Soy sauce

1/4 teaspoon                        Salt

Method

-Gently fry the chopped red onion with oil until it turns translucent. Usually, it will take about 15-20 minutes.

-Add the cinnamon, cumin and paprika then gently fry for a further 2 minutes. Keep stirring. 

-Turn the hob to a medium heat then in goes the jackfruit, Sriracha sauce and soy sauce. Mix all the ingredients well.

-Put in the soft brown sugar, sugar and cider vinegar, keep stirring until the liquid evaporates.

-You can serve this delicious vegan Sriracha pulled jackfruit in so many various ways i.e. Put in a tortilla wrap, taco, burger with rice or salad. The list goes on.

-Lastly, put in the peas and sweetcorn, fold all the ingredients together.

-Use a masher or two forks to pull the jackfruit apart which will make it look stringy, add salt to taste.

-It is not easy to get fresh jackfruit flesh. I use jackfruit from a can.

-This dish is very versatile, you can put in a burger, tortilla wrap or a taco. You can also have it with rice and salad yummm. I put it in a spring roll.
