STIR-FRIED CHICKPEA CURRY

Stir-Fried Chickpea Curry

Serve: 1-2

Ingredients:

1 can                  Chickpeas – drained    
1-2 tsp               Thai red curry paste
1 tsp                   Fish sauce
1 tsp                   Oyster sauce
1 tsp                   Sugar
1/4 tsp               Lemon juice
10 leaves           Coriander – finely chopped (optional)

Method

– Put the rapeseed oil into a frying pan.

-Add Thai red curry paste then gently fry the paste for 3 minutes.

– Turn the heat up then add the drained chickpeas, fish sauce, oyster sauce and sugar, stir-fry for approx 5 minutes. Turn the heat down and gently stir-fry for a further 10-12 minutes (be careful while you stir as the chickpeas could go mushy).

-Lastly, add the lemon juice and coriander, serve immediately with cooked Thai Jasmine rice and vegetables of your choice.

Tips:

– A perfect stir-fry is all about being focused, listen and observe your food whilst cooking it. It’s about connecting your senses with the food in front of you. Adjust the heat if you need to. Turn the heat down at the right time… gently yet confidently. I actually don’t like to talk to anyone while cooking a stir-fry. Happy Cooking!
