STIR-FRIED CHICKPEA CURRY

Stir-Fried Chickpea Curry

Serve:1-2

Ingredients:

1 can                  Chickpea-drained    
1-2 tsp               Thai red curry paste
1tsp                    Fish sauce
1tsp                    Oyster sauce
1tsp                    Sugar
1/4tsp                Lemon juice
10 leaves            Coriander-finely chopped (optional)

Method

– Put the rapeseed oil into the frying pan.

-Add Thai red curry paste then gently fry the paste for 3 minutes.

– Turn the heat up then add the drained chickpea, fish sauce, oyster sauce, sugar and stir-fried for approx 5 minutes. Turn the heat down and gently stir-fried for further 10-12 minutes. (Be careful while you turn as the chickpea could go mushy)

-Lastly, add the lemon juice and serve immediately with cooked Thai Jasmine rice and vegetable of your choice.

Tips:

– A perfect stir-fried is all about being focus, listen and observe your food whilst cooking it. It about connects your senses with the food in front of you. Adjust the heat if you need to. Turn the food at the right time… gently yet confidently. I am actually, don’t like to talk to anyone while cooking a stir-fried.  Happy Cooking!
