Stir-Fried Noodles (Vegetarian)

Ingredients:
100 gram Quorn steak strips
150 gram Soft egg noodles
175 gram Frozen mixed vegetables
20 gram Cashew nuts
2 tablespoon Vegetable oil
1 teaspoon Light soy sauce
1/2 teaspoon Sugar
1 pinch each Salt, pepper, chili flakes
1 clove Garlic – finely chopped
1 egg Fried egg (optional)
-Cook the egg noodles according to the instructions on the package. However, I used the ready cooked one.
-Gently fry the garlic in the vegetable oil until it sizzles.
-Turn the hob to a medium heat. Add Quorn steak strips and stir-fry until they turn a slightly crispy and golden colour.
-In goes the frozen mixed vegetables, stir until the vegetables soften.
-Add the light soy sauce and sugar. Followed by the noodles. Mix all the ingredients together.
-Lastly add a pinch of salt, pepper, chilli flakes and cashew nuts. Quickly stir all the ingredients together.
-Top with a crispy fried egg and serve immediately.
Tip:
– Stir-fry is all about preparation. So cut and prepare your ingredients in advance.
-Due to short cooking time on a high heat, make sure you keep an eye on the pan/wok at all times. The ingredients can easily burn.
