SUPER GOOD THAI BURGER (VEGAN)

Super Good Thai Burger

Super Good Thai Burger (Vegan)

Serve: 3

Ingredients:

50 gram                  Chia seeds

50 gram                  Flax seeds

50 gram                  Pumpkin seeds

25 gram                  Hemp seeds

200 millilitre            Vegetable stock        

3 cloves                  Garlic – finely chopped

2/3                         Red chilli – chopped

½                           Lime juice

1 medium               Red onion – chunkily chopped

1 medium               Carrot – grated

1 stalk                    Celery – grated

20 leave                 Basil – finely chopped

5 leave                    Sage – finely chopped

5 tablespoon            Rapeseed oil  

1 tablespoon            Vegan fish sauce or light soy sauce

1-2 tablespoon         Gram flour

1/4 teaspoon           Salt (optional)

 

 

 

 

Method

-Mix the chia seed and 100 milliliters of vegetable stock, set aside.
-Grind or crush the flaxseed, pumpkin seed and hemp seed to your preferred consistency. 
-Gently fry the red onion, carrot, celery, chilli, garlic and 1 tablespoon of olive oil until softened. Then add the fish sauce, basil and sage, stir well. Transfer the mixture into a large mixing bowl. Leave it at a room temperature.
-Put the chia seed mixture, seeds mixture, salt, lime juice, and gram flour into the main wet mixture bowl. 
-Divide the mixture into six balls. Lightly wet your hands and gently squeeze down to flatten into patties about 1-1.5cm thick. Carefully transfer them on a plate and leave in the fridge for at least 30 minutes.
-Heat the rest of the oil in a non-stick frying pan. Place the burger and cook for 5 minutes on each side or it turns golden brown in color. 
-Serve it with your choice of accompaniments. 

Tip:

-I love serving this high nutritious burger with sweet potato chips and a crispy leafy salad 

-My favorite condiments to go with this must be an Artisan Vegan Hot Sauce.
