Sweet and Sour Jackfruit
Serve: 3-4
Ingredients:
270 gram Jack fruit flesh
80 gram Pineapple – chunkily cut
40 gram Onion – chopped
2 clove Garlic – finely chopped
1 small Red chilli – chopped
1 Spring onion – finely sliced
2 tablespoon Vegetable oil
1 tablespoon Soy sauce
1 tablespoon Sweet chilli sauce
2 teaspoon Demerara sugar
1 teaspoon Yeast extract
1 teaspoon Yeast flakes (optional)
1 pinch Black pepper
-Put the vegetable oil in a pan and gently fry the onion, red chilli and garlic for approx 2 minutes.
-Add the Jackfruit, soy sauce, sweet chili sauce, dermerera sugar and stir fry until the sauce caramelizes (approx 10 minutes).
-Add the pineapple and yeast extract, cook for a further 5 minutes.
-In goes the spring onion, black pepper and yeast flakes. Fold all the ingredients together and serve immediately with flatbread, crunchy vegetables, or even crispy taco shells.
Tip:
– Keep an eye on the pan at all times while cooking this dish as it can easily burn.
-I used the jackfruit from the can it’s less hassle, and is quick to cook.
-You can also serve with brown rice, burger buns, and vegetables of your choice too.
