Sweet and Spicy Chicken
Serve: 2
Ingredients:
500 gram Chicken Thigh – skinned and boned
2 tbs Rapeseed oil
1 tbs Thai red curry paste
1 tbs Fish sauce
1 tbs Sugar
5 tsp Honey
-Put the chicken, Thai red curry paste, fish sauce and sugar into a mixing bowl. Fold all the ingredients together and marinate overnight or for at least 3 hours.
– When you are ready to cook. Add the rapeseed oil on the marinated chicken.
– Preheat the oven to 200 Celsius.
– Heat a griddle pan on the hob, make sure the pan is very hot. Place the marinated chicken on the griddle pan and cook for approx 1 minute on each side.
-Transfer the semi-cooked chicken on a baking tray. Drizzle with honey and bake for 15-20 minutes.
-Serve this easy and delicious Sweet and Spicy chicken with salad, Thai Jasmine rice, put it in a wrap or burger buns. The choice is endless.

-Make sure you get good quality Thai red curry paste. Click here for my choice of seasoning.
