Ingredients:
1 tablespoon Tamarind paste
1 tablespoon Fish sauce
1 tablespoon Water
2 tablespoon Soft brown sugar
1 teaspoon Lemon juice
1/2 teaspoon Chilli flakes
1 small handful Coriander – finely chopped
1 clove Garlic – finely chopped
2 small Shallots – peeled and finely sliced
-Gently heat the tamarind paste, soft brown sugar, fish sauce, lemon juice, chilli flakes and water in a small saucepan until the sugar is dissolved. It should take only 1-2 minutes.
-Remove the saucepan from the heat. In goes the shallots, garlic and coriander. Gently fold the ingredients together.
-Transfer this rich, intensely sweet and sour sauce into a sauce bowl.
-It is a great dipping sauce for grilled or barbequed seafood for example; seabass, salmon or grilled king prawns.
Tip:
-Tamarind sauce is super versatile. It is great for marinating or dipping barbeque meats, burger topping or dressing on top of deep-fried fish.
