Thai Pineapple Fried Rice

Ingredients:

1                                Cooked Gammon steak – diced

100 gram               Raw or Cooked King prawn

2                               Garlic clove – finely chopped

1/2                           Onion – chopped

1                              Spring onion – sliced thinly

50 gram                  Pineapple – cut into chunks

1 tsp                         Fish sauce

1 tsp                         Oyster sauce

1tsp                          Sugar

1 small handful     Roasted cashew nuts

2 tbs                        Coconut oil

370 gram               Cooked rice (preferably- cooked Thai Jasmine rice)

1 pinch                   Salt and pepper

Method

Method :

-Put the coconut oil and onion in a pan. Cook until the onion turns translucent.

-Add the gammon into the pan and fry until it turns slightly golden brown.

-Put in the garlic, cooked rice, sugar, fish sauce, oyster sauce, salt and pepper, stir well for approx 3 minutes.

-Add the cooked king prawns, pineapple and spring onion. Stir fry and mix all the ingredients until combined.

-Transfer onto a serving dish.

-Scatter the roast cashew nuts on the top of Thai Pineapple Fried Rice to add some crunchiness. That is it! The natural sweet and sour freshness is ready to be served.

Tip:

I  halved the pineapple then scooped all the flesh out, then used the shell as a serving dish to add the wow factor to Thai Pineapple Fried Rice. It is a bit of hassle but it looks nice and there’s less washing up! Happy cooking!
