Ingredients:
1 Chicken breast
1/2 Mozzarella – thinly sliced
6 Basil leaves
1 pinch Coriander leaves
1 tbs Thai red curry paste
1 tbs Fish sauce
1 ts Sugar
150ml Double cream
1 Tortilla Wrap
1 pinch Salt
1 pinch Pepper
2 tbs Coconut oil
– Heat the oven to 200 Celsius.
– Season the chicken breast with salt and pepper. Then put it in the oven until cooked.
– In a small pan, heat the coconut oil gently then stir in the red curry paste, mix well.
– Add double cream, fish sauce and sugar, stir gently until thickened. This mixture will be your curry pizza sauce.
– Brush the tortilla edges with water. Then spread curry pizza sauce, decorate with mozzarella, chicken slices and basil leafs.
– Put the pizza in the oven at 200 Celsius for approx 9-12 minutes.
– Garnish with coriander leaf and halves of cherry tomatoes. Then enjoy!
Tip:
Use kitchen roll to absorb all moisture off the mozzarella before assembly. We don’t want a watery and soggy bottom do we?
