THAI SUMMER SALAD

Thai Summer Salad

Ingredients :

80 gram                             Raw king prawns

80 gram                             Cucumber – thinly sliced

80 gram                             Sweetcorn

40 gram                             Red onion – thinly sliced

40 gram                             Glass noodles

10 gram                              Red chilli – finely chopped

2 clove                                Garlic

2 teaspoon                         Golden syrup

2 teaspoon                         Fish sauce

2 teaspoon                         Olive oil

4 teaspoon                         Lime juice

1 small handful                 Coriander (optional)

1 pinch                                Salt

Method

-Prepare the glass noodles according to the instructions on the package. We want the glass noodles to be soft but not overcooked.

-Mix the red chilli, garlic, golden syrup, fish sauce, lime juice, olive oil. coriander and a pinch of salt in a small mixing bowl. This is your salad dressing

-Boil the prawns in boiling water until cooked. Mine took only one and a half minutes. Then drain the water off immediately. 

-Put the glass noodles in a large salad bowl. Add the salad dressing, cooked prawns, cucumber, sweetcorn and red onion. Fold all the ingredients together.

-You can enjoy this Thai Summer Salad on its own or it is great with meaty BBQ dishes.

Tip:

-Not sure how to prepare the glass noodles? I soaked in cold water for approx 10 minutes. Then put them in the boiling water for approx 1.5 minutes.

-Make sure you use a high-quality Thai fish sauce. It makes such a difference. Happy cooking!
