80 gram                             Sweetcorn

40 gram                             Red onion-thinly sliced

40 gram                             Glass noodles

10 gram                              Red chilli-finely chopped

2 clove                                Garlic

2 teaspoon                          Golden syrup

2 teaspoon                          Fish sauce

2 teaspoon                          Olive oil

4 teaspoon                           Lime juice

1 small handful                    Coriander (Optional)

-Prepare the glass noodles according to the instruction on the package. We want the glass noodles to be soft but not overcooked.

-Mix the red chilli, garlic, golden syrup, fish sauce, lime juice, olive oil. coriander and a pinch of salt in a small mixing bowl. This is your salad dressing

-Boil the prawns in red hot boiling water until it cooked. Mine took only one and a half minute. Then drain the water off immediately.

-Put the glass noodles in a large salad bowl. Add the salad dressing, cooked prawns, cucumber, sweet corn and red onion. Fold all ingredients together.

-You can enjoy Thai Summer Salad on its own or, it is great with meaty BBQ dishes.

-Not sure how to prepare the glass noodles? I soak in the cold water for approx 10 minutes. Then put them in boiling hot water for approx 1.30 minute.

-Make sure you use a high-quality Thai fish sauce. It makes such a difference Happy cooking.??
