Tofu with Ginger and Spring Onion Stir-Fry

Serve: 2

Ingredients :

230 gram                   Deep fried tofu

80 gram                     Onion – sliced

80 gram                     Spring onion – sliced

30 gram                     Ginger – peeled and julienne sliced

3 clove                        Garlic – finely chopped

2 tbs                            Rapeseed Oil

1 tbs                            Oyster sauce

3/4tbs                        Fish sauce

1 tsp                            Sugar

1/2tsp                         Light soya sauce

1 pinches                    Ground black pepper

80ml                           Water

Method

-Put the oil and onion into a frying pan. Stir-fry the onion until it turns translucent.

-Add the garlic and stir until the garlic turns golden in colour. Keep very close eyes whilst cooking the garlic as it is easily burnt.

-Add the tofu, oyster sauce, fish sauce, light soya sauce and sugar. Then stir for a further 2 minutes.

-Add the ginger, spring onion and water then stir-fry for a further 3 minutes.

-Transfer Tofu with Ginger and Spring Onion Stir-Fry on a serving plate and sprinkle with a pinch of ground black pepper and enjoy.

Tips:

-Stir-fry is all about timing and the right heat. I often adjust the hob to a low heat whilst cooking the onion. Then turn to a medium to high heat while cooking the rest. Make sure you keep close eyes whilst cooking the stir-fry though.
