Tofu with Ginger and Spring Onion

Ingredients for deep-fried tofu:
150 gram Extra-firm tofu – cubed and pat dry
300ml Vegetable oil
1/4 teaspoon Bouillon powder (vegan)
1/4 teaspoon Salt
1/8 teaspoon Ground black pepper
Ingredients for stir-fry:
150 gram Deep fried tofu cubes
50 gram Onion – chunkily cut
50 gram Spring onion – thinly sliced
20 gram Ginger – Juliene cut
3 tablespoon Water
1 tablespoon Oil
1 clove Garlic – finely chopped
1/2 tablespoon Soy sauce
1/2 teaspoon Sugar
1/2 teaspoon Chopped red chilli (optional)
1 pinch Ground black pepper
-Put the tofu cubes in a mixing bowl. Add salt, pepper and bouillon powder and fold.
-In a small saucepan, heat 300 milliliters of oil at 170 celsius.
-Carefully put the tofu in the hot oil. Fry until the tofu turns a golden color and the skin becomes crisp.
-Remove the tofu and put it on a kitchen roll to drain the excess oil. Set aside.
-Gently fry the garlic with one tablespoon of oil in a non-stick wok or frying pan.
-Turn the heat up. Add the deep-fried tofu, ginger, onion, spring onion and water. Stir-fry for approx 2 minutes.
-Season with the soy sauce, sugar, ground black pepper and fresh chilli (optional).
-Stir for a further 2-3 minutes and transfer on a serving plate.
-Serve immediately.
Tip:
– Take extra care when preparing the deep-fried tofu. You can get the ready-made deep-fried tofu at your local Oriental Supermarket. Otherwise, you can use normal extra firm tofu too.
-Stir fry is all about quick cooking. Hence, make sure you prepare all the ingredients and seasonings in advance, keep an eye on the wok at all times and put the right ingredients in at the right time.
